Jaggery and refined sugar both are used for sweet enhancer, but a question arises who is better nutritionally and taste wise.
Jaggery – Jaggery is a concentrated product of palm sap, date, and cane juice. It is obtained without separating the molasses and crystal.

 Color – golden brown or dark brown in color.
 Components – 20 % invert sugar, 50 % sucrose, and 20 % moisture
 Availability – West Bengal, south India, Bangladesh, Nepal, Pakistan, Sri Lanka

Sugar – It is the general name for sweet, soluble, short-chain carbohydrates.

Comparison between Sugar and Jaggery
1. Both Jaggery and sugar give an excellent texture to the food.
2. There are different components present in sugar and Jaggery.
3. Sugar is made of sucrose whereas jaggery is made up of sucrose, mineral, salt, iron and fiber.
4. In order to make sugar, the syrup is treated to remove the unwanted particle, so that after condensation and crystallization white color product is formed.
5. In the case of jaggery, no treatment is given and it doesn’t undergo crystallization.
6. The basic difference between sugar and jaggery is the color; sugar is generally white or brown in color. Whereas color of the jaggery varies from golden brown to dark chocolate.
7. Sugar crystal is solid and also hard, on the other hand jaggery is semisolid, softer than sugar and also amorphous.
8. Jaggery can be boiled and in the molten form, we can give a different shape to it.
9. Sugar only consists of sucrose, so when we consume sugar it is easily absorbed and it elevates total blood sugar level there fore sugar is not recommended to a diabetic patient.
10. Jaggery on other hand is healthy because it is made up of longer chains of sucrose, thereby it is digested slowly and it is not harmful to health.

Jaggery is better than sugar because

2. Jaggery is a good source of potassium it reduces water retention help in weight reduction.
3. Jaggery act as a cleansing agent, it cleans the internal system like lungs, respiratory tract, intestine, esophagus, and stomach.

6. Increase immunity of the body
Jaggery can be picked by sweet tooth than sugar. Jaggery sweets, jaggery chocolates, jaggery can add flavor to the milk. Jaggery cakes, jaggery ladoo,  jaggery ice cream can be consumed.
