ADULTERATION OF MILK AND SAFETY

Milk adulteration is the intentional or unintentional addition or substitution of substances to and from the milk. Intentionally to increase the volume i.e. quantity by adding water to milk & unintentionally adulteration by accidental contamination of microorganisms during storage, processing, transportation and distribution of milk.
Milk is considered as a complete food with high nutritional demand. Milk is essential in our diet to maintain good health. So, either due to its high demand, financial gain or due to poor hygienic condition, milk adulteration is a common problem. The lack of Food Safety and Public Health Department Vigilance increases the fraud. Milk adulteration causes various health problems.
When the milk is considered adulterated:
 When it injuriously deteriorates our health
 When a cheap or inferior material is mixed to become a part of original milk.
 Any required nutrients are removed or included
 Addition of color, chemicals or additives to improve the appearance, density, and flavor
 Substandard quality
Common Milk Adulterants: Detection and Safety: Detection of milk can be done at home and also at the laboratory. Some examples of common adulterants are given below:
 Water: It increases the volume of milk. Contaminated water causes various water borne diseases like diarrhea. It also lessens nutritional composition of water and if we continue  the  use adulterated milk results malnutrition.
Detection: The presence of water can be confirmed by dropping milk into shining and slanting floor if the milk is pure and not adulterated with water it flows slowly leaving a mark behind it and if it is adulterated it flows rapidly without leaving a mark.
 Starch: It increases thickness and viscosity of milk. Undigested starch causes diarrhea and also increases the sugar level of diabetic patients.
Detection: If the iodine solution is added to milk it shows blue color which proves the presence of starch.
 Urea: It increases whiteness and consistency of milk. It causes many health problems like gastroenteritis, indigestion, diarrhea, acidity, ulcers, impaired vision and kidney problems.
Detection: Half teaspoon of soybean or arhar powder is added into the test tube with milk, shaken well and a red litmus paper dipped into the mixture which turns blue indicating adulteration of the milk with urea.
 Detergent: It increases the foamy appearance of milk. The addition of detergent causes food poisoning and other gastrointestinal complications, body tissue damage, respiratory problems, hypotension, and cancers.
Detection: If later produced when milk is added with 10 ml water and shaken properly, confirms the presence of detergent.
 Synthetic milk: It increases the thickness and viscosity of milk and also maintains the protein, fat and carbohydrate content. An inclusion of synthetic milk causes impaired growth, heart problems, cancers and even death.
Detection: Synthetic milk is bitter in taste and when it rubs into the finger it leaves a soapy feeling and takes yellow color after heating.
 Glucose or Sugar: It increases the density of milk and its carbohydrate content. Excess sugar level raises the blood glucose level and is risky to use for Diabetic patients.
Detection: If a Diabetic strip is dipped into the milk for a minute and if there is a change of color it proves the presence of glucose.
 Chemicals and Preservatives: Sodium bicarbonate, Sodium carbonate, Calcium hydroxide, Caustic soda or Chemical formalin, salicylic acid, Benzoic acid are added to milk to enhance the shelf life of milk as it is a perishable item and it spoils very easily. These additives cause gastric irritation, Diarrhoea, bleeding, nausea, and headache, vomiting, liver and kidney damage, mood swings, decreased body temperature, dermatitis etc
Detection: Presence of formalin, benzoic acid, and salicylic acid is detected by adding concentration  sulphuric acid and ferric chloride to milk which when reacts with benzoic and salicylic acid to give pale yellow-brown color and violet colored products
 Ammonium sulfate: Its presence shows nausea, vomiting, diarrhea, respiratory, gastrointestinal problems, skin problem, and sensory disturbances.
Detection: It can be detected by adding sodium hydroxide, sodium hypochlorite and phenol the reaction of three reagents with milk which results a deep blue color if there is ammonium sulfate.
 Microorganism: Milk is sometimes contaminated with microorganisms like bacteria. Pasteurization is one of the processes to destroy harmful bacteria

End note: Adulteration of milk is increased due to lack of simple methods of detection of milk and also due to insufficient actions are taken by the public health department and food safety department. Proper nutritional labeling and buying milk from authorized shops check this type of illegal addition of adulterants. Milk adulteration is not safe and proper management may be required to stop such use of adulterants.
